The Love me, love you Shiraz comes from the Balhannah area of the Adelaide Hills. Balhannah experiences very cool nights which are optimal for slow, even ripening. The Shiraz was harvested at the end of March. The wine was fermented with indigenous yeast. 30% whole bunch, plunged just twice a day, pressed off after 14 days on skins and maturated in French oak barrels, of which 20 % were new. During maturation the wines had no intervention, and, like the Semillon, were left until late spring when they seemed to be almost whispering to me when I walked past them, to be racked and bottled!
